Obsessed with BAO (steamed dumplings)

Lately I can't stop thinking about bao. Unfortunately, I can't really get it around here, so I'm thinking about making my own. A bit of research has turned up a number of different recipes for the dough. Some use cake flour, others don't use yeast, etc. Any ideas, suggestions, thoughts, recipes?
