I very rarely cook beef but decided I wanted to have a roast for New Year's Day with my black eye peas. NY Strip Roast was on sale at Whole Foods so I bought one. I have read every post here on how to roast. Extrapolating to a smaller roast - it is only 3.5 lbs, here's what I am thinking - bring roast to room temperature, low roast at @225 to 125-128. (Rest for an hour and half, and then blast in the convection oven at 500 for 5 or 6 minutes. Does this sound right? Should I sear first?
