Does an unripe fruit have a different nutritional profile than a ripe one (and vice versa)?
For example, does a ripe honeydew melon have more vitamin C than an unripe honeydew melon?
Along the same lines, is a ripe fruit more calorically dense than an unripe one?
What about fiber? Is there more or less fiber in an unripe fruit than a ripe one? Or is there no difference?
