Can we make nitrite free bacon?

The carnivore, having used his smoker for just about every hunk of meat imaginable, (the buffalo tri-tip was fabulous!) now wants to make bacon. While supporting him in all this madness, even hauling home great gobs of meat from the wholesale butcher, I wonder if there is a way to make bacon without the nitrites. All the recipes he's seen use it, what happens if we don't? We know that the meat will not be "preserved", but isn't that what freezers were invented for?I can tell that all sorts of cured meats are lurking in our future.... Help!
