Newly Discovered Veal Lust-- Veal Breast Edition

I've never cooked or ordered veal in a restaurant until yesterday. We never had it as a child and by the time I went to college I was opposed to production issues. I have it in a few tasting menus/meatloafs/stocks but I've always avoided it other than that. My husband loves it.

Yesterday, without warning, I decided I wanted a veal chop for dinner. My husband-- no fool-- said not a word.

WOW- utterly delicious. I was amazed at how much I enjoyed it. Deeply flavored, tender, & succulent. Where have you been all my life? My husband grilled the chops and we ate them with chanterelles sautéed in butter, peas a la Française, and mashed potatoes. Terrific meal.

Today, I bought an enormous veal breast. Suggestions?
