I'm nervous! Keeping oven on over night to make pulled pork

Hello! I want to make pulled pork in my (convection) oven and I have a 10 lb pork shoulder (too large for my crock pot). I’d like to have it ready for lunch so essentially would mean I need to have my oven on all night. As a fairly new cook, I have never had my oven on this long ever and of course am a little worried about leaving it unattended overnight. I haven’t settled on a recipe just yet, but looks like I will need to keep the oven at about 300 degrees F. Any experiences, thoughts, words of wisdom? Help me not sleep in front of the oven all night! Thank you so much.
