Needed: Bread Boule Recipe (adamclyde???)

I'm not thrilled with the loaf (rosemary) I've been baking to use as a bread boule for dips..... can anyone help a girl out? I'm not adverse to using herbs in the bread.

I'm rather a novice at the baking of bread, but my honey oatmeal and cinnamon raisin swirl loaves turn out great. My shaped loaves lack something. Mostly height. Any help will be appreciated. I do have a kitchenaid stand mixer.
