Nashville ethnic near Grand Opry Resort?

Hi all - I'm heading to a conference in Nashville at the end of February, and unfortunately, it's being held at the Grand Opry Resort east of town. I say 'unfortunately' because I think the location is going to isolate me from the best that Nashville has to offer, ethnic food-wise! The resort has 2200 rooms and 25 restaurants, and to me, that says corporate food like nothing else can.

So, I ask this knowledgeable and friendly group, what are my options for good, vegetarian-friendly chow in that area of town? I will probably have some sort of transportation, like a cab. I love Thai, Ethiopian, Indian, Italian, etc. I'm not looking for incredibly upscale/fine dining, but a decent selection of wines or beers would be a bonus, definitely. I'll be there for about 5 days. Breakfast and lunch will be provided by the conference at the resort, but some dinners will be on my own.
