Mussels Cooked in Slow Cooker Look Stringy and as if Exploded Inside Shell

Hello,

My boyfriend and I cooked this recipe this tonight for dinner:

We followed the recipe step by step and then kept the mussels in the cooker for a little longer than 20 minutes, as it didn't seem the mussels were popping open more than a centimeter or so. After about 25 minutes total for the mussels, when we opened the mussels, almost every mussel was stringy around the inner rim of the shell and the rest of the meat looked like it had exploded within the shell. Please see the photo attached to this post.

I can't find any similar photos or answers to questions like this elsewhere online. Any advise or insight would be much appreciated. Thank you!
