I bought some new goat cheese (soignon, from France) the other day & it is mild, soft and creamy, not chalky (for the lack of a better word). I thought this may be nice to stuff inside pastry bites along with sauteed mushrooms. However, I think it needs some kind of a sweet addition. Perhaps a small dollop of roasted tomato chutney or cranberry? I would like to purchase this at either our local "gourmet" store or Whole Foods. Please advise as I don't usually cook with cheese other than perhaps baked brie. Thanks!!
