Okay, after Mrs. Smith's post yesterday, I had to try the #1 ranked apple oatmeal muffins.
As usual, I found myself a few ingredients shy.
I followed the recipe as closely as possible, using steel cut oats instead of rolled oats and Mexican crema instead of yogurt. I didn't have any walnuts or pecans, but added raisins to some of the muffins.
All in all, a success! Note to others: do soak the steel cut oats for at least half an hour--more if you want them to mesh seamlessly with the batter. Half an hour gave me a toothsomeness I like, and I suspect the oats will be a little softer tomorrow.
