Mt. Fuji is located directly across from Chamas in Dribghtleaf Square. They opened last week and I had a chance to go by there with three of my collegues today. The dishes they offered were predominantly Thai curries and noodle dishes and sushi. I had the chicken with green curry, and the others had chicken with yellow curry, pad thai and honey chicken with crispy noodles. My green curry was really good. Nice and spicy, a creamy coconut milk gravy, and plentiful portion of chicken considering it was lunch portion priced at only $6.95. I tried the yellow curry and pad thai and they were very tasty as well. Everyone was quite happy with their dishes. I like the menu in that most items are available for both lunch and dinner and the prices are reasonable, quite favorable compared to Thai Palace. The resturant is pretty and I really liked the hip international dance music theyhave playing.
This is a qualified rec given I've only been there once and only for lunch but I think y'all should give this place a try. I will definitely be back.
