Moustache Baked Goods opened its doors today, “bringing cupcakes to Healdsburg”, as one of the co-owners said. Here’s the cupcake menu for the first day of business.
In addition, Moustache’s own version of Oreos, chocolate wafer sandwiches filled with vanilla buttercream graced the display counter. French macarons will be introduced soon.
I asked and was told that The Outlaw (chocolate cake with chocolate caramel frosting and sea salt) had been the most popular selection of the day.
After studying all the choices (and asking a gazillion questions to put the staffers/owners through their paces), I picked The Local Cupcake, $3, banana cake with chocolate caramel frosting and sea salt.
Fine-grained, fresh banana cake was light and almost delicate. Too much nutmeg for my taste, but I appreciated the well-judged hand with the level of sweetness. At the center, I bit into a soft surprise, a core of caramel.
Unlike the cupcakes that compete with candy sweetness and frothy frostings, the fresh, wholesome ingredients used by Moustache don’t need to hide behind so much sugar. The buttercream actually tastes like butter (said to be Clover Organic) and has a fudgy density.
Real cake, real buttercream. And Four Barrel coffee from San Francisco too. I like it.
