Not often at fish counters around here, so when it's there, I buy it. I like it's solid texture & mild taste. Have cooked it several different ways... no recipe, just instinct. Works fairly well on grill cuz it hold together pretty nicely... one of those flat grill grill thingies would help some. Have cooked in oven. Usually just stove top, quick and hot in a little olive oil and/or butter. Thinking of cutting into medallions and searing like scallops.
