Mondongo is a tripe-based soup from the Carribean, not unlike menudo, and it appears on the menus of several Cuban and Puerto Rican restaurants, often as a daily special. If you google "mondongo" and check out the images, you see many different types. On one hand there is a kind of thin soup with pieces of tripe floating in it, the other extreme seems to be a rich stew or casserole, almost like a cassoulet. It's this second kind that intrigues me - would anyone know where to find a thick, stew-like mondongo in greater manhattan?
