This year, after returning from a New York visit, I decided to have a Bo Ssam Christmas dinner! In the spirit of Christmas, we still had a turkey with all the fare, but sharing the table was our roasted pork shoulder, 3 dozen local Kusshi oysters (I live in Vancouver), ssam kimchi, lettuce, ginger scallion sauce, and the ssam sauce. I used the sauce recipes from Martha Stewart's website, and bought the kimchi from our local korean supermarket (had to pre-order). At home we added some shredded korean pear to the kimchi.
While making the ginger scallion sauce, the recipe instructs you to mix the ingredients in a bowl. We decided to blend them which emulsified the sauce, which I think is better. The pork was in the oven for 5 hours, basting hourly. The final step of covering with brown sugar and salt melted into a wonderful sweet crust.
The dinner was a hit, the only downfall was that we could have used another dozen oysters! Overall the meal was simple to prepare, I'd say easier than a turkey dinner!
