Molcajete but not using a pestle

We have a resto in town that's making guac tableside on a cart, and instead of a pestle, they're using an unpeeled avocado. Tried to see if the same one was re-used, or split and used for the next batch, but couldn't get a good enough view. First-rate guacamole, to be sure, from a very simple recipe, but the usage (gloved hand, BTW) surprised me. Have I been missing something for all these years?
