Hi all. I want to make a stuffed leg of lamb for Easter Sunday, but the recipe I want to use (from Epicurious) requires me to bake the leg at 450 F for 25 minutes, and then turn down the heat to 350 F for 30 additional minutes. The problem is, I want to attend Easter services, which will take about 1.5 hours. Is there any way to modify the recipe cooking temperature to allow me to attend the service while the lamb cooks without overcooking it!!? I want to cook the lamb at 450 in order to get it nicely browned, but would like to know if I can roast it at a temperature lower then 350 for 1.5 hours and get similar results? Or can I roast the lamb in the morning, and then reheat it after services? At what temp should I re-heat so that the lamb is still medium to medium rare? Help!
