We often discuss what's here in the Baltimore chow scene, but just to turn things around a bit, I'd like to hear comments on what's missing. What cuisine is not represented by an acceptable outpost? What particular food item do you yearn for that cannot be found in local restaurants (or groceries/markets, for that matter)? If a rich and capable restauranteur asked you to describe an ideal "concept" for the Baltimore area (cuisine, location, target audience, etc.), what would you tell him?
