Why does the miso become tasteless?

I love the flavor of miso. Miso soup is delicious. I'd really like to do some kind of chicken with miso for family dinner. I've tried a couple of different recipes, including this one http://www.thekitchn.com/roasted-miso... and keep having the same problem. The marinade was delicious when I tasted it when I made it, but then after cooking the whole thing went kind of tasteless. That yummy miso taste was gone. I was using white miso.

What am I doing wrong?
