Miso Ramen @ Mama-san!, San Francisco

Sigh . . . another throw-away ramen experience.

This little hole-in-the-wall just off Clement has a big sign advertising ramen. The proprietress was super-friendly, chatting away with customers in Mandarin, Cantonese, and English.

I ordered the miso ramen, $6.50, and asked for the noodles cooked "hard". I could watch the prep in the open kitchen while I munched on the complimentary dish of edamame. Noodles were fresh, but cooked too long until they turned into mush. The broth started with homemade chicken soup, but was killed with too much soy sauce and had hardly any miso flavor. The bean sprouts were carefully plucked and the snow peas were crisp and fresh. The wakame was nice, but the scallions were papery and dry. Watery bamboo shoots were unadulterated straight out of the can. Chasu was plentiful but dried out and tasteless.

In this meal, the edible parts were the veggie toppings and the edamame appetizer. Leaving the rest behind, I paid my bill and got out of there. Mama-san comes in at #40.
