Miso paste - tips on storage? how to use?

masha | Oct 1, 201507:25 AM     26

Back story: The NYT recently had an article on Asian pantry items to keep on hand for easy meals, one of which was miso paste. Even before that article, I'd clipped a few recipes that looked appealing that required miso paste. I've never used it before. When I was in the store last week, the only miso paste that I saw was in a relatively large, plastic tub for about $8. I could not find any information on the label as to whether it needed to be refrigerated once opened.

My main question: Do I need to refrigerate miso paste once it's opened?

Beyond that, any advice or suggestions on how to use it?
