Last-minute Passover Seder/matzoh ball help

Hey all,

I'm hosting a second-night (Tuesday) Passover seder for some co-workers and friends. A couple people don't eat meat, which means no chicken soup.

Here's the problem: I still want to serve matzoh balls some way. Now obviously I could do a vegetable broth instead of chicken broth, but I was thinking of doing something a little more interesting (likely a cream of sweet potato soup, though I still may do a yukon gold and carmelized leek soup).

So I was thinking I could make the matzoh balls as a side dish, possibly slicing them and serving something in between each layer. Only problem is I need some ideas what to use (most of what I'd be inclined to try in normal circumstances, like a turkey bacon, isn't kosher for passover or dairy)?

Main course will be a quiche with peppers* along with roasted vegetables.

* Occurs to me roasted/marinated red peppers might make a nice "filling" for the matzoh balls, so I could possibly do that there and not in the quiche...
