This is to commend the butcher there. I don't know if in the past few months they hired a new one, but the quality of their meats has gotten allot better. The staeks are thicker cut and eveything there looks great. I needed a mess of beef shortribs for a braise and he cut me some that had to be 3 inches thick and some of the nicest looking ribs I've ever seen. Kudos to you!!
