While at the Phoenix Ranch Market, I could not resist buying some dried white corn. It looks about the same size as hominy, the kernels are quite large. I had never used this before but figured something would "pop" for an idea.
Several days later, I'm stumped. Many cookbooks later, including Diana Kennedy & Rick Bayless, are no help. How do I cook these? Soak first? Make a soup?
I can "taste" something in my mouth with green chiles & cumin but don't quite know how to begin.
