I have a dinner guest tomorrow night. I am serving lamb ragu over pasta (epi recipe). Followed by a simple salad of boston greens dressed with a vinaigrette of olive oil, mustard and champagne vinegar. Instead of dessert I want to do a cheese board. I have 3 cheeses hard, goat and a washed rind brie style. I will also have grapes, dried apricots, nuts, figs and lexia raisins to serve with. chocolate truffles with coffee.

My question. I want to do medjool dates stuffed with parmesan. Now I could wrap in bacon, and warm/broil, as an appi. Or I could avoid the bacon and serve with the cheese board. Or I could include the bacon and warm and serve with the cheese board.

what do you think I should do?
