Memphis Minnie's Frito Pie

Some recipies ride that fine line of "is this genius or is this just laziness?". Sometimes you muse over a novel presentation at a high-end restaurant and wonder if you presented that same melange at home would you be accused of merely combining leftovers or would you too be considered an original genius ...

Well, I find Frito Pie (really good Frito Pie) to be genius. And I think Memphis Minnie's got a good Frito Pie. It's smothered in nice-sized cubes of soft meat in an uber-thick chili. The "fritos" are the the large "scoopy" variety, and hold their crispiness well. There is a generous sprinkling of freshly chopped onion under the heavy blanket of melted cheddar topping. I also found an intact clove of garlic in the beef chili. An entire, sweet, cooked garlic clove.

Was that rogue clove just laziness or was it genius? I say, "genius with a side of cornbread" ...
