Melting Ricotta???

All,
I have Mario’s recipe for baked pasta with cheese and beef and it says to melt the ricotta with the pasta water.

Perhaps this is a mistake since all one would get is hot slop.
Perhaps he meant to melt the “caciotta”.

BTW what is caciotta and what would be a good substitute for it?
