should I let my meat mix rest?

I'm going to make pot stickers which uses meat mixed with various spices and chopped veggies. I wonder if I should let the meat mix rest in the fridge for a while so that the flavors have time to meld together. Does it make a difference whether I cook it right away vs. if I let the mix rest? This question would apply to making meatloaf, burgers, or any other dishes using ground meat mixed with various ingredients.
