I am happy to say that our local matsutake season is here. I would love to hear about recipes involving this dreamy creature. I am fond of marinating and grilling it, thn serving it hot, sliced, over confettied napa cabbage, I use some of the marinade on the cabbage as dressing, ...a basic lime cilantro jalapeno garlic rice wine thing, with a lil salt n sugar of course.
If there is a restaurant in the bay area where this mushroom is served id love to know about it.
I hunt my own and am currently making eyes at 8# of beautiful buttons. I would love to exchange recipes or knowledge about them anytime.
Also, does anyone have a tried and true recipe for hedgehog mushroom pickles.
