Mashed Celery

A friend recently related a meal he had at a French restaurant (don't remember which one) where he had a celery puree that tasted exactly like mashed potatoes. Does anyone have any idea how to do this? All I've been able to come up with is boiling the celery until it's done and passing it through a ricer.
