I was wondering how long homemade truffles wil last. I'd like to make a batch to send to my friends on the East Coast. Keeping in mind holiday mail volume, and that I'm shipping from Davis, CA to various places in New York, Vermont, and Massachusetts, I expect the total shipping time to be around 2 weeks. Are there any good truffle recipes that I could use, whose results would last at least 2 weeks? Barring that, are there any preservatives I can buy to add to the truffles?
Another related question -- what's the best way to add liqueur to the ganache inside the truffles? I was thinking of making a sugar imbibing syrup, then stirring it (heated) into the cream.
