Making Stock in the Oven?

My make-ahead turkey gravy recipe calls for simmering roasted turkey legs on top of the stove for 6 hours to come up wit the stock. I'd love to liberate the stovetop for other endeavors by having this process take place in the oven. Is this possible? What temperature would be best?
