Making homemade tortillas

fladd | May 8, 2006 05:52 AM

I was just watching the new episode of Good Eats. Alton Brown was making homemade tortillas, including treating flint corn with lime, etc...

I was wondering - would canned hominy work? It's already been treated with lye and seems like it would be about moist enough when ground up.

Alternatively, does masa harina flour make a decent tortilla?

Should I just give up on this project? I live in New Hampshire and the odds of actually getting fresh masa are very slim.

Thanks.
