So I was trying to make chocolates for mothers day last week and my chocolates would not come out of the mold. I am hoping some hounds have some advice on what to do differently.
I have a rigid polycarbonate candy mold that I bought from J.B. Prince. I used Trader Joes Swiss Dark Chocolate and melted the chocolate over a hot water bath. I brought the temperature to 87 degrees and poured the chocolate into the mold. After it set I filled with some chocolate ganache and then topped that off and let it set again. I twisted the mold as best I could (it is polycarbonate after all) and slammed the mold on the counter and nothing happened. After a few more attempts all I accomplished was waking our sleeping toddler.
Any suggestions would be greatly appreciated.
