Making a chocolate cake: best cocoa?

The sour cherry thread has inspired me to make the epicurious.com recipe of chocolate-sour cherry squares. Got the cherries, now need the chocolate.
So, fellow dessert-making chowhounds: what's the best "not Dutch-processed" unsweetened cocoa?
Ghirardelli? Hershey's? Scharffen Berger? An obscure brand that will turn my cake into a marvel? :-)
Suggestions please?
