We've got friends coming over Saturday night--2 adults, 2 kids. I'd rather make something that I can prep ahead and put in the oven while they are there. Nothing too exotic--I think they're rather plain eaters (and before you say I need new friends, I've known the husband for 25 years--it's the wife and kids who like plain stuff). I was thinking maybe baked "greek" chicken with lemon, oregano, parsley, olives and shallots with herbed orzo and green beans, since the chicken can be put together in advance and baked later, but I'm not feeling it. I'd love to do beef burgundy in the crock pot, but my morning is filled with kid sports.
Anybody have a thought?
