Happy Thanksgiving, everyone! I made Maida Heatter's double crust Mom's Apple Pie this morning. I'm sure it will taste good, like all of her recipes, but it looks kind of sad. She called for making a standing up fluted crust. I did, but it all flopped over during baking, so it's more like a flower (I'm being generous here) with uneven petals. I'm wondering if it's because I did an all-butter crust (instead of half Crisco). I know you can also freeze pie crusts before cooking them -- but should I have frozen the whole pie?? That sounds not quite right to me. Ah, well. There are so many things to be thankful for, I'm not going to let one weird-lookin' pie get me down! As they say, this is what whipped cream is for.
