If I were given the choice of only one thing to eat for the rest of my life, I think I'd probably choose enchildas.
I love them stacked. I love them rolled. I love them with mole or salsa verde.
Today, I decided to drop in to El Presidente, the Mexican 'diner' at the corner of Ashland and Wrightwood for a quick bite.
I ordered the pork enchiladas with salsa verde. A simple dish. Certainly not authentic. But something I like none the less.
Upon close inspection, I could see that the pork filling had been slow simmered in a fantastic rich adobo until it was fork tender. The pieces of meat fell to pieces when touched with the fork. The combination of pork in adobo, with fresh corn tortillas, salsa verde, a heap of crumbled queso and a dab of sour cream made a really interesting and spicy yet cool impression on my palate. It's the kind of food that you enjoy enough to eat often. But, you never really recommend it to anyone because its just plain old Mexican Food.
Even though I realize that it's not authentic in many ways and that there's far better Mexican to be had in Chicago, I like El Presidente. And I had a very good and inexpensive meal there today. Just thought I'd let you know...if you're a fan of enchiladas like me.
