Loop lunchers may share my interest in the transformation currently being performed on the erstwhile Lams Express, a horrible pseudoChinese steam-table shop on the east side of Wabash between Madison and Washington (19 N. Wabash). The windows are papered over and there is a sign that promises: coming soon To Pho. These words are accompanied by an image of a caricatured Vietnamese rustic happily slurping a giant bowl of soup with noodles in it.
These clues inspire me to dare to dream that a pho shop might soon be opening downtown. What are the odds of it being any good? Has anyone ever heard of something called "To Pho?"
