liver pate without alcohol

There's an Epicurious recipe for chicken liver pate that I have made several times and enjoy a lot. It calls for cognac. I want to make this recipe for some friends who can't have the alcohol, and I'm curious whether people think I should substitute something else for the cognac, or just skip it entirely.
