I wanted to report to ChiHounds on a great experience I had last night. While driving home through Lincoln park, I decided to stop in at LINDO MEXICO for a bite to eat. I remembered this restaurant from years back in its Evanston version, and Im happy to report that it is better than ever, and I think under new management
In addition to the usual tex mex fare- the enchiladas suizas and carne asada looked good- but I was surprised to see a specials menu that had about ten authentic dishes from Southern Mexico. I had the Cochinita Pibil (sp?) and my SO had the grilled shrimp in Mole Verde. Both were the best Ive had in any of the other local, highly-acclaimed Mexican joints.
The manager of the restaurant checked on us, asking if we liked our dishes, and introduced himself as Yebel, said he was from Guerrero, Mexico and had worked previously at Chilpancingo. He said he wanted to make his favorite dishes more accessible to everyday Chicagoans. Why not? The Pibil was complex and delicious, and it felt like a great neighborhood spot. If I wasnt driving home Id have sampled from the Tequila bar, which looked extensive.
