Basic soup: proportion 7 (pork)/3 (chicken)

Mix in a bowl the pork groundmeat with water to preserve the meat. Put all the ingredient in a stewpot for 2-3 hours with water .
Shio tare : kombu marinades in the morning in the sake, mirin. Add some salt, pepper and ginger (and lard according to each taste)
Preferably for the aromatic oil with green leeks – shrimps .
