OK - I know this is crazy, but the other day I zested about 8 limes and then had to leave for a meeting. (was thinking of making some cookies when I got back home, but the day got away from me and I forgot) The bowl of lime zest has been very quietly sitting in the corner of the kitchen and I had frankly forgotten about it until today.
The zest now has the touch and feel of woodland moss now. But - No strange odors, no mold, etc.... Can it still be used in a recipe? I'd surmise there is about 1/4 cup of zest. No big deal if I can't use it, but was was hoping not to waste it if this change in appearance is OK (healthwise, tastewise, etc.)
