My aunt sent me a bottle of artisinal California olive oil infused with lime. I made a salad dressing with it today, and I have to say, it's pretty weird. It has a strong lime flavor, but absolutely no acidic quality. I mixed it with white wine vinegar (thinking that would be neutral enough), but with everything else in the salad, it just tastes really weird. Any ideas for what to do with a whole bottle of this strange, fancy condiment?
