For a girls getaway, I'm making baby back ribs, a fairly traditional sweet/smoky recipe. I'm looking for a few side dishes that are a little different and on the lighter side, since so much of our food over the weekend will be so heavy. No potato salad or cole slaw. If it were July, I'd do a watermelon feta salad or a cherry bread salad. It will be the first weekend in May on the east coast, if that helps you in terms of what's fresh. (I'm on the west coast so haven't been able to see what produce is around.)
Thanks!
