Really light, chewy focaccia recipe?

I've been doing a lot of baking recently, and there's a type of focaccia that they serve at one of my favourite restaurants that I love- it's very basic, but the texture is open, light, and chewy. I'm trying to figure out how to make it, and by extension pita and other flatbreads as well. Does anyone have any tips or tricks? Thanks.
