lifethymes in the village 6th avenue- are they for real??

I am a non-vegetarian who loves really good vegeterian or even vegan meals- i.e. meskerem, where you can sop up delicious veggie stews with spongy injera, almost any asian restaurant (especially south india)...you get the point. This is why I am so confused about vegetarian joints like this one (to be fair, lifethymes- also an organic supermarket- has some organic chicken and fish) offers vegetarian food that is just plain gross, and gives people like Anthony Bordain more reasons to feel good ripping on people who chose a veggie lifestyle. I have tried numerous dishes at their takeout counter- the strawberry cheesecake and pumpkin pie had strong medicinal aftertastes. The quinoa "power pie" tasted like flavorless mush. Do vegetarians really eat this stuff? It's not like this is all there is- the tofu cheesecake at Teany's in the LES is phenomenal! I'm just really curious how other people feel about this.
