After I got a whole bunch of potatoes in my organic basket this week, I decided to try a recipe I'd saved a long time ago for microwaved fat-free chips. (I can hear you groaning already!)
You basically slice scrubbed potatoes very thin (I used a mandoline), place them in a single layer on a plate covered with cooking spray, then sprinkle with salt. Nuke at high temp for 10-12 minutes.
I will never buy chips again. These are seriously the best I've ever had - they're crispy and even golden! - and they're fat-free!!! (I only make one potato at a time for portion control.)
Any others have life-changing recipes to share?
