I have never made soup before but all of a sudden I have an urge to make lentil soup! This started because the woman who babysits for my 1 year old daughter was eating lentil soup for lunch, let my daughter taste it and she loved it. So as I was about to go out and buy canned soup, I thought that it's probably something that I could make and it would be far better than anything that I could buy.
But I don't know where to begin. I looked on Epicurious.com and there were a bunch of recipes, some with meat and some not. I have no idea if lentil soup is better with meat or without. I really have no preference, since I'm not strictly looking for a vegetarian version, but I am trying to keep it somewhat healthy.
So having said all that, can anyone point me to a delicious, somewhat simple, and relatively healthy recipe for lentil soup?
